Say "hello" to Fall with these delicious, festive, Vegan Kahlua Pumpkin Spice Cupcakes.
Ingredients
Dry
- 1 1/2 cup Flour
- 1/2 teaspoon Salt
- 1 1/4 teaspoon Baking Powder
- 1/4 teaspoon Cinnamon
- 1 cup Sugar
Wet
- 1/2 cup Butter (1 Stick; Softened)
- 1/4 cup Pumpkin Puree
- 1/4 cup Kahlua
- 2 Flax Eggs (One flax egg is 1 tbsp of ground flax meal mixed with 2.5 tbsp of water.)
Frosting
(Optional)
- 2 cups Powdered Sugar
- 1/2 cup Butter (1 Stick; Softened)
- 3 tablespoons Kahlua
- 1/2 teaspoon Pumpkin Spice

Step 1

Preheat the oven to 375 degrees Fahrenheit. If you would prefer to make a loaf/pan cake, then about 350 degrees instead. Prepare the cupcake baking sheet with cupcake liners or grease the loaf/pan if you are using that. |
Dry Ingredients

In a large bowl, combine and all the dry ingredients (sugar, flour, salt, baking powder, and cinnamon). |
Wet Ingredients

In another bowl (medium size works), combine and mix the wet ingredients (flax eggs, butter, Kahlua, and pumpkin puree). Once everything is mixed add the wet ingredients to the dry ingredient bowl. Mix until everything is combined well and you have a smooth batter. This will be more on the thicker consistency side of cupcakes, so if you need to you could add a tablespoon extra of water or Kahlua. |  |

Put the batter into cupcake liners. If you have an ice cream scooper, I suggest using that because it's much easier. Place in the oven for 20-25 minutes (Times may vary depending on your oven. It took mine 25 minutes to be baked all the way through.) Check that the cupcakes are ready by using a toothpick and making sure it comes out clean. |  |

In a bowl, add the powdered sugar, butter, Kahlua, and pumpkin spice. I suggest using an electric mixer in order to get a creamy frosting. Once the cupcakes are cool enough, add the icing. Sprinkle some cinnamon or pumpkin spice on top to add a little more flavor. |  |
