This vegan apple crisp recipe has a delicious flavor combination of sweet and sour along with a delightful texture combination of soft and crispy. It's sure to be a savory hit for any Fall special occasion.

Ingredients

Fruity Layer

  • 1 dash Ground Cloves
  • 6-8 Granny Smith Apples (Thinly sliced with the skins)
  • 2 cups Cranberries (Fresh or Frozen)
  • 1 tablespoon Cinnamon
  • 1/2 cup Sugar

Topping

  • 3 cups Plain Oats
  • 1 cup Brown Sugar
  • 1 teaspoon Cinnamon
  • 1/2 cup Vegan Butter (Melted (1/2 cup = 1 stick of butter))

Topping (Optional)

  • 1/2 cup Almond Milk (Use as needed if the topping is too dry or difficult to spread)

Directions

Preparation
Step 1
Preheat the oven to 350 degrees Fahrenheit. Grease a 12 X 8 baking dish (or a similar size). If you are using a loaf dish (i.e 5 X 9), you will need to split the recipe up.
Fruity Layer
Step 2
Once the apples are thinly sliced, place them in a large bowl or tupperware container. Add the cranberries as well. Add the rest of the dry "Fruity Layer" ingredients (cinnamon, sugar, ground cloves). Toss the fruit until they appear to be evenly covered by the dry ingredients. Spread the apples and cranberries evenly at the bottom of the baking dish.
Topping
Step 3
In another bowl, mix together the topping ingredients (plain oats, brown sugar, cinnamon, and melted vegan butter). As you are mixing if you realize the consistency is too dry or difficult to mix/spread, then you can add some almond milk (optional). Evenly spread the topping over the apples and cranberries in the baking dish so that they are fully covered by the topping.
Baking
Step 4
Place the dish in the oven, uncovered, for about 45 minutes.
